Guided tours on an antique tractor meander past our century-old olive groves as far as the thousand-year-old oak tree and back. Tours last approximately 15 minutes during which your guide will present information about the history of Highland Springs Ranch & Inn and current preservation efforts. ABOUT HSR
ABOUT THE HISTORIC HIGHLAND SPRINGS RANCH & INN
Established in 1884, Highland Springs Ranch & Inn (formerly known as Highland Springs Resort) is Riverside County's first historical landmark. The property encompasses 2400 acres and is comprised of an organic farm, restaurant, inn and camp. Formerly a stagecoach stop, the ranch was frequented by such historical celebrities as Wyatt Earp, Ernest Hemingway and Albert Einstein.
Although 123 Farm may be well-known for its organic lavender fields, the olive trees are our oldest crop. The majority of our trees are Mission olive trees which were planted in 1854. These olives are typically pressed to make olive oil. Our Picholine and Frantic trees, planted in 2009, are also used for oil, while the crops from the Manzanilla trees are good for making table olives. The crop is harvested every October by staff and volunteers from the local community. The olives are then taken to Paso Robles in a refrigerated truck and pressed within 24 hours of harvesting. Some of the extra virgin olive oil is bottled and sold. It is also used in the The Grand Oak Steakhouse and as an ingredient in our various beauty products. At times olive branches are fed to our sheep as a natural supplement to improve immune function.
